GRILLED MEAT KABOBS

1 1/2 Ihs. boneless lamb, cut in 1 1/2 inch cubes

Marinade:

1/2 cup olive oil
1/4 cup dry white cooking wine*
3 Tablespoons lemon juice
1/2 teaspoon pepper
1 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme

Place meat cubes in a deep bowl. In a small bowl, combine marinade ingredients; pour over meat cubes. Cover and refrigerate 12 hours or overnight, turning meat occasionally while marinating. Preheat a barbecue grill or broiler. Drain meat, reserving marinade. Slide marinated meat cubes onto four long metal or wooden skewers.

Place on grill or under broiler 3 1/4 inches from heat. Cook about 20 minutes, turning frequently and basting with oil and reserved marinade, if desired. Serve with cooked carrots and rice that have been sprinkled with a little fresh or dried thyme or oregano.

Makes 4 servings.

COOK'S TIP
Soak wooden skewers 30 minutes in water before using on a grill.

*2 Tablespoons Wine Vinegar and 2 Tablespoons water may be substituted for wine.
